These little bites have become a go-to in my morning routine — especially on those non-stop days when I need clean energy without the crash. I love how easy they are to prep ahead, and honestly, they taste like comfort food and fuel in one bite.

They’re packed with protein and hormone-friendly ingredients like spinach, eggs, and cottage cheese to support metabolism, lean muscle, and satiety. It’s the kind of recipe that helps you glow from the inside out — and keeps you going strong through the morning chaos.

Protein: 14g per serving

Ingredients:

  • 6 eggs, whisked
  • ½ cup cottage cheese
  • ¼ cup crumbled feta cheese
  • 2 cups baby spinach, chopped
  • ¼ red bell pepper, finely diced
  • 2 green onions, chopped
  • ½ tsp garlic powder
  • Sea salt & black pepper, to taste

Instructions:

  1. Preheat the oven to 350°F (175°C) and lightly grease a mini silicone muffin tray.
  2. Combine all ingredients in a mixing bowl and stir until well mixed.
  3. Pour the mixture evenly into the muffin cups, filling each about ¾ full.
  4. Bake for 20–25 minutes, or until golden on top and firm in the center.
  5. Let cool slightly before serving. Store extras in the fridge for up to 4 days — great for meal prep!
