I’ve been traveling a lot lately, and even when I’m able to make it back home for a few days, it feels like time slips away. It’s easy to order out or pop in a quick frozen pizza after a long day. However, you don’t have to fall into this trap.
When I know I’ll be traveling a lot, I like to prepare a meal in my slow cooker. I throw in all the ingredients and have it ready around dinner time. You can have a delicious, nutritious meal waiting for you without spending hours in the kitchen!
This meal is easy to make and great to share with your family. It’s packed with protein, vitamins, minerals, and healthy carbohydrates. Try it next time you have a busy week!
Ingredients:
- 2 tsps Sesame Oil
- 3 Garlic (clove, minced)
- 1/4 cup Tamari
- 2 tbsps Brown Sugar
- 2 tbsps Rice Vinegar
- 1/3 cup Water
- 1.5 lbs Stewing Beef (cubed)
- 1 Yellow Onion (medium, chopped)
- 1 1/2 tbsps Arrowroot Powder
- 6 cups Broccoli (chopped into florets)
Instructions:
- Add the sesame oil, garlic, tamari, sugar, vinegar, and water into the slow cooker and whisk to combine.
- Add the beef and onion. Cover and cook for four hours on high or eight hours on low.
- About 30 minutes before serving, remove about 1/4 of the liquid and transfer to a bowl. Add the arrowroot powder and whisk to make a slurry. Add the slurry back into the slow cooker along with the broccoli.
- To serve, divide evenly between bowls and enjoy!
