That’s where a high-protein diet comes in. Protein is essential for muscle recovery, sustaining energy, and keeping those hunger cravings at bay—especially when you're juggling a busy lifestyle. When I discovered this high-protein chicken dish, it was a game-changer for my meal prep routine. I am so excited to share it with you!
This dish is packed with protein, antioxidants, and fiber, making it a powerhouse meal to fuel your day. The chicken provides lean protein to support muscle growth, while ricotta cheese adds a creamy texture and boosts calcium for bone health. Mushrooms and roasted red peppers bring a dose of antioxidants and vitamins, while olive oil and lemon juice contribute healthy fats and vitamin C. Toss it onto a bed of spring mix, rice, quinoa, or any healthy carb of your choice, and you’ve got a balanced, nutrient-packed meal.
Ingredients:
- 2 tbsps Extra Virgin Olive Oil
- 2 tbsps Shallot (diced)
- 0.5 lbs Chicken Breast (boneless, skinless, cubed)
- 1 ½ cups Mushrooms (sliced)
- Sea Salt & Black Pepper (to taste)
- 1/2 cup Ricotta Cheese
- 1 ½ Roasted Red Peppers
- ½ Lemon (juiced)
- 2 Garlic (clove)
- 2 tbsps Parsley (for garnish)
Instructions:
- Heat the oil in a pan over medium heat. Add the shallot and sauté for two to three minutes, or until softened.
- Add the chicken and mushrooms to the pan. Season with salt and pepper, and cook for about 10 minutes, stirring occasionally, until browned.
- Meanwhile, combine the ricotta, roasted red peppers, lemon juice, and garlic in a blender. Blend until smooth, adding a splash of water if the sauce is too thick to blend.
- Pour the ricotta mixture into the pan. Stir well, then reduce the heat to medium-low. Simmer for five to seven minutes, allowing the flavors to meld and everything to cook through.
- Taste and adjust the seasoning as needed. Divide evenly between bowls and top with parsley. Enjoy!
