Ingredients:

  • 1 cup jasmine rice
  • 454 grams extra-lean ground beef
  • 4 cups baby spinach (packed)
  • 1 tablespoon tamari

Instructions:

  1. Cook the rice according to the package instructions and set aside.
  2. While the rice cooks, heat a large skillet over medium heat. Add the ground beef and cook, breaking it up with a wooden spoon. Once fully cooked and no longer pink, carefully drain any excess drippings from the pan.
  3. Add the baby spinach to the skillet and stir until wilted. Pour in the tamari and mix well to evenly coat the beef and greens.
  4. Divide the cooked rice between plates and top with the beef and spinach mixture. Serve warm and enjoy.
