Ingredients:

  • 1 tbsp Extra Virgin Olive Oil
  • ¼ tsp Sea Salt (divided)
  • ¼ tsp Black Pepper (divided)
  • 1 cup Cherry Tomatoes (halved)
  • ¼ cup Black Olives (pits removed)
  • 1 stalk Green Onion (chopped)
  • ¼ cup Basil Leaves (chopped)
  • ¼ cup Water
  • 2 Haddock Fillets (or other white fish)

Instructions:

  1. Heat the olive oil in a medium-sized pan with a lid over medium heat. Season the fish with half of the salt and pepper; set aside.
  2. Add the cherry tomatoes to the pan and cook for about 5 minutes, until softened and releasing their juices. Season with the remaining salt and pepper, then add the olives, green onion, basil, and water. Stir to combine and bring to a gentle simmer.
  3. Place the fish fillets on top of the tomato mixture, cover with a lid, and let them steam for 4–8 minutes, until cooked through and flaky.
  4. Spoon the tomatoes and olives over the fish, serve warm, and enjoy the fresh simplicity of Mediterranean wellness on your plate.
