Ingredients:

  • 680 grams Stewing Beef, cubed
  • 4 cups Butternut Squash, peeled, seeded, and chopped
  • 1 cup Red Onion, chopped
  • 1 ⅔ cups Pureed Pumpkin
  • 1 ⅔ cups Canned Coconut Milk (Full Fat)
  • 1 cup Beef Broth
  • 1 tablespoon Turmeric (Ground)
  • 1 tablespoon Fresh Ginger (Minced)
  • 3 cloves Garlic (Minced)
  • ¼ cup Coconut Aminos

Instructions:

  1. Combine Ingredients: Place all ingredients except the coconut aminos into the pressure cooker and stir well.
  2. Cook: Secure the lid and set the cooker to “Sealing.” Cook on high pressure for 30 minutes.
  3. Release Pressure: Allow pressure to release naturally for 5 minutes, then carefully release any remaining pressure manually.
  4. Serve: Divide into bowls and drizzle with coconut aminos. Enjoy this creamy, fragrant curry that nourishes from the inside out.
