With clean protein from chicken, grounding carbs from potatoes, and immune-supporting ingredients like garlic and thyme, this creamy soup helps stabilize blood sugar, calm the nervous system, and restore gentle warmth to the body.

Ingredients:

  • 1 tsp extra virgin olive oil
  • ½ yellow onion (diced)
  • 2 garlic cloves (minced)
  • 454 g chicken breast (boneless, skinless, cubed)
  • 4 yellow potatoes (peeled, diced)
  • 2 medium carrots (peeled, diced)
  • 4 cups low-sodium chicken broth
  • 1 tbsp fresh thyme (chopped)
  • Sea salt & black pepper (to taste)

Instructions:

  1. Heat the olive oil in a large pot over medium-high heat. Add onion and garlic, and cook until softened, about 5 minutes.
  2. Add chicken, potatoes, carrots, broth, and thyme. Bring to a boil, then reduce heat and simmer for about 40 minutes, or until chicken is fully cooked and vegetables are tender.
  3. Using an immersion blender, blend the soup until smooth. Season with salt and pepper. Serve warm and enjoy every soothing spoonful.
