Ingredients:
- 1 tsp extra virgin olive oil
- ½ yellow onion (diced)
- 2 garlic cloves (minced)
- 454 g chicken breast (boneless, skinless, cubed)
- 4 yellow potatoes (peeled, diced)
- 2 medium carrots (peeled, diced)
- 4 cups low-sodium chicken broth
- 1 tbsp fresh thyme (chopped)
- Sea salt & black pepper (to taste)
Instructions:
- Heat the olive oil in a large pot over medium-high heat. Add onion and garlic, and cook until softened, about 5 minutes.
