Sometimes the simplest meals feel the most indulgent. This one-pan cherry chicken brings together tender, golden chicken breasts with the natural sweetness of fresh cherries. Cherries are rich in anthocyanins, which help fight inflammation and support heart health, while lean chicken breast delivers high-quality protein to keep you energized and satisfied. And the best part? It all comes together in just 25 minutes with minimal cleanup.

Ingredients:

  • 2 tbsp extra virgin olive oil (divided)
  • 510 g chicken breast (boneless, skinless)
  • 2 cups cherries (pitted, halved)
  • 1/3 cup shallot (chopped)
  • 2 cloves garlic (minced)
  • 1 cup chicken broth
  • 1 tbsp lemon juice
  • 2 tbsp fresh oregano (chopped)
  • Sea salt & black pepper (to taste)

Instructions:

  1. In a large skillet, heat half of the oil over medium-high heat. Add the chicken breasts and cook for 4–6 minutes per side until golden brown. (The chicken won’t be fully cooked yet.) Set aside.
  2. In the same skillet, sauté the cherries and shallot for 2–3 minutes, until tender and juicy. Transfer to a plate.
  3. Add the remaining oil to the skillet, then sauté the garlic for 30 seconds until fragrant. Stir in the broth and lemon juice. Bring to a simmer, then reduce heat to medium-low. Let the sauce cook for 3–5 minutes until slightly reduced.
  4. Return the chicken and cherry mixture to the skillet. Simmer for another 5–7 minutes, until the chicken is cooked through. Season with sea salt and black pepper.
  5. Garnish with fresh oregano and serve warm.
