Ingredients:
- 2 tbsp extra virgin olive oil (divided)
- 510 g chicken breast (boneless, skinless)
- 2 cups cherries (pitted, halved)
- 1/3 cup shallot (chopped)
- 2 cloves garlic (minced)
- 1 cup chicken broth
- 1 tbsp lemon juice
- 2 tbsp fresh oregano (chopped)
- Sea salt & black pepper (to taste)
Instructions:
- In a large skillet, heat half of the oil over medium-high heat. Add the chicken breasts and cook for 4–6 minutes per side until golden brown. (The chicken won’t be fully cooked yet.) Set aside.
- In the same skillet, sauté the cherries and shallot for 2–3 minutes, until tender and juicy. Transfer to a plate.
- Add the remaining oil to the skillet, then sauté the garlic for 30 seconds until fragrant. Stir in the broth and lemon juice. Bring to a simmer, then reduce heat to medium-low. Let the sauce cook for 3–5 minutes until slightly reduced.
- Return the chicken and cherry mixture to the skillet. Simmer for another 5–7 minutes, until the chicken is cooked through. Season with sea salt and black pepper.
- Garnish with fresh oregano and serve warm.
