How do you make the cottage cheese tortilla you might ask? First, whisk the cottage cheese and egg whites together in a bowl. Then spoon the mixture onto a baking sheet in equal circles. Top the finished cottage cheese tortilla with eggs, and TADA you have a high-protein, low-carb and delicious meal.
This is a great way to sneak in more protein into your diet without feeling like you have to compromise on taste.

Ingredients:
- 1/4 cup Cottage Cheese
- 1/4 cup Egg Whites
- 1/16 tsp Black Pepper
- 1 1/2 tsps Extra Virgin Olive Oil
- 2 Egg
- 1 tbsp Pesto
- 1/2 cup Microgreens
Instructions:
- Preheat the oven to 400ºF (205ºC) and line a large baking sheet with parchment paper.
- Whisk the cottage cheese and egg whites together in a bowl. Spoon the mixture onto the baking sheet into equal circles.
- Bake for 25 minutes, or until crispy. Set aside to cool for 10 minutes.
- Meanwhile, add the oil to a pan and cook the eggs until the whites have set and the yolks reach your desired doneness.
- Top the cottage cheese taco shells with pesto, eggs, and microgreens. Enjoy!
