Ingredients
- 1 1/2 cups Brown Rice (dry, rinsed)
- 0.4 lbs Pickled Chipotle Peppers (in adobo sauce)
- 1 lbs Chuck Roast (boneless, cut into chunks)
- 1 1/2 tsps Sea Salt (divided, plus more to taste)
- 3 cups Water
- 1 head Green Lettuce (shredded)
- 1 ½ Avocado (medium, sliced)
- 3/4 cup Salsa
- 3 stalks Green Onion (chopped)
- 3/4 cup Cilantro (chopped)
Preparation:
- Cook the rice according to the package directions.
- Add the peppers with its sauce to a blender or use a hand blender to blend until smooth.
- Place the meat, 3/4 of the salt, water, and blended pepper sauce in a pressure cooker. Set to “sealing,” then press manual/pressure cooker. Cook for one hour on high pressure.
- Allow the pressure to release naturally. Carefully remove the lid of the pressure cooker. Remove the beef chunks from the pressure cooker and use two forks to shred the beef.
- Press the sauté button. Reduce the remaining cooking liquid, uncovered for 15 to 20 minutes or until reduced to about half. Add the beef back to the pressure cooker and stir to combine.
- Divide the rice, lettuce, beef, avocado, salsa, green onions, and cilantro evenly between bowls. Drizzle some of the sauce over top and enjoy!
