Ingredients:

  • 2 large eggs
  • 3 cups mixed greens
  • 100 g smoked salmon, sliced
  • ½ avocado, sliced
  • 2 tablespoons avocado oil
  • Sea salt, to taste
  • Black pepper, to taste

Instructions:

  1. Place eggs in a small pot and cover with cold water. Bring to a boil over high heat. Once boiling, remove from heat, cover, and let sit for 12 minutes. Transfer to an ice bath, then peel and slice in half.
  2. Add mixed greens to a large bowl. Arrange smoked salmon, avocado slices, and eggs on top.
  3. Drizzle with avocado oil, season with sea salt and black pepper, and toss gently before serving.
