Herbed Deviled Eggs

This is a delicious and nutritious dish, perfect for sharing with friends and family on Veterans Day or as a snack for gatherings. Eggs provide high-quality protein, essential for muscle repair and supporting overall health. They’re also rich in healthy fats and vital nutrients like vitamin D and B12, which help boost energy levels and promote brain health. The red bell pepper adds a dose of vitamin C and antioxidants, while the parsley and chives bring freshness and extra vitamins to the mix.

For a lighter option, you can substitute the mayonnaise with Greek yogurt—it adds creaminess, extra protein, and probiotics to support gut health. This dish is a balanced, satisfying snack that’s sure to be a hit at your next event!

Ingredients: 

  • 6 Eggs
  • 2 tbsps Mayonnaise or plain greek yogurt
  • 1/2 tsp Dijon Mustard
  • 14 grams Relish (optional)
  • 2 tbsps Parsley (chopped)
  • 1 tbsp Chives (chopped, plus more for garnish)
  • Sea Salt & Black Pepper (to taste)
  • ¼ Red Bell Pepper (small, finely diced)

Instructions: 

  1. Place the eggs in a saucepan and cover with cold water. Cover and bring to a boil. Remove from the heat and leave it covered for 12 minutes. Drain the water and run cold water over the eggs until cooled. Once the eggs have cooled completely, peel them and slice them in half lengthwise.
  2. Scoop out the yolks into a food processor. Add the mayonnaise, mustard, relish (optional), parsley, and chives. Season with salt and pepper. Mix until well combined.
  3. Pipe the yolk mixture back into the egg whites. Garnish with red bell pepper and extra chives. Enjoy!
