If you’ve followed me for a while, you know I am a big fan of getting enough protein for optimal health. Lately, I’ve been relying on store-bought protein bars as a go-to healthy sweet treat and a convenient way to add some protein to my son’s lunches. But, to be honest, I’m not in love with all the ingredients in those bars. Have you ever looked at the back of a protein bar and wondered what on earth those sugar alcohols, unpronounceable chemicals, and seed oils are doing in there?
Sure, they are better than a snickers, but it’s time for a bigger upgrade
I wanted a better option that I could whip up in my own kitchen, using wholesome ingredients that I can actually pronounce. And that’s when I came up these fantastic Collagen Protein Balls! And the best part – NO COOKING REQUIRED!
Not only are they delicious, but they also offer incredible health benefits. Collagen, known for its role in promoting healthy skin, hair, and nails, also plays a vital role in supporting joint health and improving gut function. It’s like a superpower wrapped up in a tasty treat! Plus, if you working on building lean muscle and strengthening your bones – protein is your friend. This tasty treat sure packs a punch.
And it passed the test of my son’s “sophisticated” tastebuds!
Here is the recipe for you to try.
INGREDIENTS:
- 1/2 cup creamy organic almond butter (or your favorite nut butter)
- 2 tbsp coconut oil
- 1/2 tsp vanilla or caramel extract
- ⅛ tsp salt
- 1/3 cup Stevia (for low carb/low calorie) or your favorite natural sweetener such as honey or maple syrup
- 1/3 cup collagen peptides
- 3 to 4 tbsp almond flour
INSTRUCTIONS:
- Step 1: In a microwave-safe bowl, combine the almond butter and coconut oil. Heat in 30-second increments until they can be stirred together. Alternatively, you can use a saucepan on the stove if you prefer.
- Step 2: Stir in the vanilla extract, salt, sweetener, and collagen peptides until well combined and smooth.
- Step 3: Gradually work in the almond flour, a few tablespoons at a time, until the mixture forms a thick dough. The amount of almond flour may vary depending on the brand of nut butter you use.
Optional: Add in your favorite mix-ins such as mini chocolate chips, carb chips, raisins, chopped nuts, or shredded coconut for some extra texture and flavor. (I used organic chocolate chips!)
- Step 4: Roll the mixture into 1 ½ inch balls and place them on a waxed paper-lined tray.
- Step 5: Refrigerate the protein balls for about 30 minutes to set before serving
Store any leftovers in an airtight container in the refrigerator.
