Cheesy Egg and Turkey Bacon Casserole

With family coming around more often during the holidays, it can be tough to coordinate a healthy and quick brunch that everyone will love. Luckily, I’ve found the perfect recipe—this Cheesy Turkey Bacon & Egg Casserole is an easy, crowd-pleasing dish packed with nutrients that will satisfy even the pickiest eaters.

The turkey bacon offers lean protein, keeping you and your guests feeling full without the extra fat of traditional bacon. Eggs add an additional protein punch, along with essential vitamins like B12 and D to support energy and immune health, which is essential for everyone during this chilly season. The combination of whole milk and cheddar cheese provides a delicious richness, while also delivering calcium and healthy fats important for bone health and muscle function. The colorful elements in this meal, like the red bell peppers and yellow onion offer antioxidants and fiber, while the russet potato provides a source of slow-digesting carbs to keep everyone fueled for hours.

Whether you’re hosting a big brunch or prepping meals ahead, this casserole is a balanced, nutritious option that’s quick, easy, and sure to be a hit with the whole family. 

Ingredients: 

  • 6 slices Turkey Bacon
  • 1 tsp Extra Virgin Olive Oil
  • 1 Yellow Onion (small, diced)
  • 2 Red Bell Pepper (small, diced)
  • Sea Salt & Black Pepper (to taste)
  • 1/4 cup Cow's Milk, Whole
  • 1 tsp Garlic Powder
  • 12 Egg (whisked)
  • 1 Russet Potato (large, peeled, shredded and patted dry)
  • 0.5 Lbs Cheddar Cheese (shredded)

Instructions: 

  1. Preheat the oven to 400°F (205°C) and grease a baking dish.
  2. Heat a cast-iron pan over medium heat. Cook the turkey bacon for three to four minutes per side. Set aside.
  3. In the same pan, add the oil, onion, bell peppers, salt, and pepper. Sauté for four to five minutes or until softened.
  4. Add the milk, garlic powder, salt, and pepper to the whisked eggs. Stir to combine, then add the potatoes, cheese, and sautéd vegetables. Stir to combine.
  5. Pour into the prepared baking dish. Bake for 30 to 35 minutes or until the eggs are set. Let it cool for five minutes before cutting into squares. Serve and enjoy!
