GLOW Midweek Recipe: Salmon Endive Salad

This Salmon & Endive Salad makes a perfect lunch or easy weeknight supper.

Salmon is loaded with nutrients, and is rich in heart and brain health-supporting Omega 3’s. Celery and green apple lend the perfect crunch, while also adding fiber and antioxidants. Hemp seeds are chock full of protein, and the capers add the perfect salty bite.

This is a flavorful and nutrient-dense salad that also helps to support the detox pathways in your body. Salmon & Endive Salad is the perfect, light spring meal that comes together in just a few minutes!

Salmon & Endive Salad (for phase 1 and phase 3) [Serves 2]

INGREDIENTS:
1 can of sustainably caught Salmon, drained
½ stalk Celery, diced
½ Green Apple, diced
1 teaspoon Capers
1 tablespoon Hemp Seeds
2 tablespoons Parsley, chopped
1 tablespoon Extra Virgin Olive Oil
Salt and Pepper to taste
4 -6 Endive Leaves

DIRECTIONS:
Mix all the ingredients, except endive together. Serve in endive leaves.
