Salmon & Endive Salad
(for phase 1 and phase 3) [Serves 2]
INGREDIENTS:
1 can of sustainably caught Salmon, drained
½ stalk Celery, diced
½ Green Apple, diced
1 teaspoon Capers
1 tablespoon Hemp Seeds
2 tablespoons Parsley, chopped
1 tablespoon Extra Virgin Olive Oil
Salt and Pepper to taste
4 -6 Endive Leaves
DIRECTIONS:
Mix all the ingredients, except endive together. Serve in endive leaves.
