GLOW Midweek Recipe: Garlic Chicken Asparagus Wraps
If you’re looking for the perfect spring dish, these Garlic Chicken Asparagus Wraps need to be on your menu this week! This recipe is loaded with clean protein, not only from the chicken, but the asparagus as well.
Compared to other veggies, asparagus is relatively rich in protein, and is also high in potassium, Vitamins K, C and A and folate. Asparagus is also a great source of fiber, niacin and iron. This recipe not only tastes great, it’s loaded with nutrients and antioxidants, too.
Sprinkled with seasonings and topped with a squeeze of fresh lemon, the chicken wraps are the perfect, bright spring bite. With just a few minutes of prep, these wraps come together in no time making it a great choice for a weeknight dinner or entertaining!
7 ounces chicken breast
20 asparagus spears, ends trimmed
1/2 onion, sliced
2 teaspoons roasted garlic
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon dried oregano
1/2 teaspoon dried basil
2 tablespoons lemon juice
Combine roasted garlic, salt, pepper, oregano and basil in a small bowl and set aside.
Place a piece of plastic wrap on a flat work surface and put one chicken breast on top. Place another piece of plastic on top of it. Pound the chicken with a meat mallet until about ¼ inch thick. Repeat with the second chicken breast.
Place flattened chicken breasts on a sheet tray lined with parchment. Rub half of the garlic mixture across each piece of chicken.
Place 10 asparagus spears and 1/2 the sliced onions in a small pile on each chicken breast. Roll the chicken around the asparagus and place the seam of the chicken down against the sheet pan.
Pour 1 tablespoon of lemon juice across both chicken breasts (reserve 1 tablespoon for after baking).
Bake in a preheated 375-degree oven for 25-30 minutes or until chicken is browning and cooked through.
Garnish with remaining lemon juice and serve hot.
